Apple Cinnamon Butter

 

Ingredients:

 

  • 4 cups dried apples
  • 1 teaspoon cinnamon

 

Method:

 

  1. Place apples in a saucepan, cover with water and soak until slightly plump.
  2. Add cinnamon, bring to boil and simmer until apples are cooked.
  3. Cool and puree in a food processor.
  4. Serve warm or cold with cereal, porridge or on toast.
  5. Cover and keep in the refrigerator for up to two (2) weeks.

 

Buckwheat Pancakes

 

Ingredients:

 

  • ½ cup self raising wholemeal flour
  • ½ cup buckwheat (or additional wholemeal flour)
  • 1½ cups milk
  • 1 egg

 

Method:

 

  1. Separate the egg whites from the yolk.
  2. Sift flours into a bowl and blend in milk and egg yolk.
  3. Beat egg white until stiff and gently fold into buckwheat mixture (add a little more milk, if necessary to make a smooth consistency).
  4. Place spoonfuls of the mixture on a hot, non-stick pan until bubbly.
  5. Turn over and cook the other side.
  6. Serve with cinnamon apple butter, fresh berries, homemade natural yoghurt or mixed berry sauce.
  7. Serve immediately.
