Bliss balls are a super quick and easy treat to whip up when you’re short of time. I don’t even roll the mixture into balls when time is short. I just whack the mixture into a small glass dish and press it flat. Then I cut it up later.
These bliss balls have a mild minty flavour and are great with a cuppa. They’re also nut free so great in kids lunchboxes. I recommend organic coconut that’s preservative free. If you only have shredded coconut or coconut chips feel free to use that too, you’ll just need to blitz it a bit longer in the food processor.
For a bit of variety, you could also roll these balls in desiccated coconut or even a quality drinking chocolate.

Ingredients
¾ cup (95g) cacao nibs
1 tbsp chia seeds
1½ cups (130g) desiccated coconut
2 tbsps cacao powder
Pinch of salt
2 tbsps thick coconut cream
12 large fresh medjool dates, pitted
4 drops edible peppermint oil / peppermint extract (or to taste)
Method
- Grind chia seeds and cacao nibs together in a food processor until fine
- Add the other ingredients and blitz for 1 minute or until comes together
- Roll into balls, or you could press into in a slice pan and cut up later
- Place in the fridge until ready to serve
