Did you know that December 8th is National Brownie Day? Celebrate the special day that is dedicated to their gooey goodness by treating yourself to one of these delicious recipes! Not only are they easy to make, but they’re also guaranteed to be a crowd pleaser.
Brownie Pops
Makes: 8 large brownie pops (or 16 smaller pops)
Prep time: 20 minutes
Cooking time: 30 minutes
Ingredients:
For the brownies
150g butter
275g (1 ¼ cups) caster sugar
75g (3/4 cup) cocoa
2 tsp vanilla extract
3 eggs
75g (1/2 cup) plain flour
To decorate
Icy pole sticks
1 X 250g CSR All Natural Buttercream Icing Mix
150g unsalted softened butter
3 tsp water
Sprinkles, 100s and 1000s, edible silver baubles
Method:
- Preheat oven to 160ᵒC and line a 20cm square tin with baking paper. Set aside.
- In a microwave safe bowl, heat butter for 1 minute. Stir in the caster sugar and cocoa powder. Heat in the microwave on 30 second bursts (50% power) until melted and combined – stirring each time. Allow to cool slightly.
- Add the vanilla extract and the eggs and whisk until combined. Sift the plain flour into the bowl and mix gently.
- Pour the brownie mixture into the prepared tin and bake for 30 mins or until just cooked through (do not overcook). Leave in the tin to cool completely.
- Trim any raised edges off the brownie so you have a completely flat square brownie then turn the brownie over onto a flat board.
- Cut the brownie into 8 equal rectangles (or 16 smaller rectangles if you prefer) and then shape the top of each into a classic rounded ‘ice-cream’ shape. Place an icy-pole stick into the base of each brownie pop.
- To decorate, start by preparing the buttercream icing by beating the butter until smooth and creamy. Add the Buttercream Icing mix and water, beating again until combined.
- Spread the icing over the top of the brownie pops and decorate with sprinkles, 100s and 1000s and silver baubles.
Chocolate Star Brownies
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 12-16
Ingredients:
150g butter, diced
150g dark cooking chocolate, chopped
1 cup CSR Brown Sugar
½ cup CSR Caster Sugar
3 extra large eggs
1 tsp vanilla extract
¾ cup plain flour
¼ cup cocoa
2 tbsp craisins
Chocolate stars, for decoration
Method:
- Pre-heat oven to 170°C (150°C fan-forced). Line a 20 x 20cm slice tray with baking paper. Place butter in a large microwave proof jug and cook in microwave on Medium for 1 minute. Continue in 15 second bursts until completely melted. Add chopped chocolate to butter and stir until melted and mixture is smooth.
- Using a whisk, mix in sugars until smooth, then add eggs and vanilla, mixing well.
- Add flour and cocoa to bowl and continue whisking until mixture is well combined. Stir in craisins.
- Pour into prepared tray and top with the chocolate stars, pressing in slightly. Bake for 30 minutes. Allow to cool in tray.
