There’s nothing better on a cool afternoon than hot scones straight from the oven spread with lashings of butter and jam. This gluten free recipe is really quick and easy and doesn’t need many ingredients.
I use Bob’s Red Mill Gluten Free All Purpose Flour because I love the results I get with it but you could try this with any gluten free flour. You may need to adjust the amount of liquid a little if you do and if the flour you use has xanthan gum in it then there is no need to add that either.
This recipe can also be dairy free if you use dairy free milk and is nut free, egg free and soy free.
Gluten Free Scones
Ingredients:
- 2½ cups (325g) Bob’s Red Mill Gluten Free All Purpose Flour
- 2 tbsps sugar
- 1 tsp xanthan gum
- 2 tsps gluten free baking powder
- 1 tbsp solid coconut oil
- 1 cup (250ml) of milk
- Extra milk for brushing scones with
Method:
Heat oven to 200°C
Line a tray with baking paper
Put all of the dry ingredients into a food processor and combine
Add solid coconut oil and blitz until it resembles fine bread crumbs (you could also just use a bowl and run it in)
Add the milk to the mixture and gently mix with a spoon
Tip out soft, sticky dough onto a lightly floured mat on the bench
Knead gently until smooth and spread out to about 2cm thick
Use a small round cutter (about 5cm) to cut out the scones and place on prepared baking tray
Brush top of scones with milk
Put in hot oven to bake for 10 – 12 minutes
Remove from oven and cool on a wire rack
Serve as desired.
