Add a little Bl‘oo’berries in your children’s lunch box this school year and get a sweet smile from their faces! These blueberry, coconut and macadamia bliss balls will fill you up while packing a punch of sweet flavour. Perfect for an afterschool snack, or addition to your kids lunch box.

 

Ingredients:

150g (1 cup) frozen fresh blueberries
120g (1 1/2 cups) desiccated coconut
70g (1/2 cup) macadamias
40g (1/4 cup) almonds
1/4 cup goji berries
10 medjool dates, seeds removed
1 lemon rind, zested

 

Method:

Place fresh blueberries, coconut, macadamias, almonds, goji berries and dates and lemon zest into a blender. Pulse on high for 30 seconds to 1 minute until mixture is combined and smooth.

Remove mixture from blender and place into a medium sized bowl. Measure out 2 tablespoons into your hands and shape firmly into a ball shape.

Place into an airtight container and repeat with all the mixture until finished.

Transfer container into fridge and allow to set for 1-2 hours.
