I can’t resist a perfectly chewy bakery-style cookie, with crispy edges, a soft gooey centre and plenty of chocolate chips.

This recipe is made using Whole Earth Allulose, a 100% natural, low calorie sugar replacement, along with sugar-free chocolate chips, to make them a little more nourishing. It’s a simple change that has a much smaller impact on blood sugar levels, helping to support more stable energy and mood, without sacrificing flavour or texture.

Ingredients

  • 160g unsalted butter, melted and cooled
  • 160g Whole Earth Allulose
  • 55g (¼ cup) brown sugar
  • 1 whole egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 250g (2 cups) plain flour
  • 1 tbsp cornflour
  • 1 tsp baking soda
  • 1 tsp flaky sea salt
  • 1 tsp ground cinnamon
  • 1 cup sugar-free chocolate chips

Method

  1. Whisk together the melted butter, Whole Earth Allulose and brown sugar until smooth.
  2. Add the egg, egg yolk and vanilla, then whisk until well combined.
  3. Fold through the flour, cornflour, baking soda, sea salt and cinnamon until just combined.
  4. Stir through the chocolate chips.
  5. Cover and refrigerate the dough for at least 4 hours (overnight is even better). This is the secret to thick, chewy bakery-style cookies.
  6. Allow the dough to sit at room temperature for 20–30 minutes.
  7. Roll into even-sized balls and place onto a lined baking tray, leaving room to spread.
  8. Bake at 170°C for 12–15 minutes, until the edges are lightly golden but the centres still look slightly underdone.
  9. Leave the cookies to cool on the tray—they’ll continue to cook and become perfectly chewy.
