Ingredients:

  • 3 zucchini, grated
  • 2 corn cobs, stripped of kernels
  • 6 extra large eggs
  • 4 spring onions, finely chopped

 Flour

  • 1/3 cup parmesan, finely grated
  • 1/2 tsp lemon zest
  • 2 tbsp olive oil
  • To serve, sour cream, chilli jam & fresh coriander

 Method 

  1. In a large bowl, combine the zucchini with corn kernels, eggs and spring onions. Mix with a fork until well combined.
  2. Add flour, Parmesan, lemon and seasonings to the zucchini mixture, mixing well.
  3. Heat a large frying pan over medium heat and add oil. Form small patties with your hands and place into pan, cooking for 2 to 4 minutes until golden. Turn patties, taking care as they are fragile, and cook the other side. Remove to a paper towel lined plate and keep warm whilst repeating with remaining mixture.
  4. Serve patties with sour cream, chilli jam and coriander.
