Ingredients: 

400g Australian barramundi fillet

1 tbsp seafood masala

1 tbsp oil

2 cups shredded iceberg lettuce

½ cup mayonnaise

4 soft tacos

½ bunch mint

½ bunch coriander

1 cup pineapple, finely diced

½ lime

Salt, to taste

Method: 

  1. Rub the barramundi with seafood masala, oil and a pinch of salt. 
  2. Grill the barramundi until charred and flaky. 
  3. Warm the soft tacos. 
  4. Mix together iceberg lettuce and mayonnaise. 
  5. Stir together mint, coriander, pineapple and season. 
  6. Layer each taco with iceberg lettuce, then barramundi, salsa and squeeze over lime just before serving.
