So, when the premade meals from your loved ones run out, what’s the next best option? Frozen batch meals that are nutritious, delicious and versatile so you don’t feel like you’re eating the same meal on repeat.

Setting aside a couple of ours to meal prep with a trolley full of fresh produce is a great starting point for batch cooking. You can make simple recipes like chili, soup, casseroles and curries in huge batches with minimal ingredients. These types of dishes freeze really well and will last in the freezer for up to 6 months.

  • Vegetarian Chilli: this dish can be enjoyed in a few different ways: with corn chips, over rice or just on its own.
  • Lentil and Spinach Soup: you can pack this dish with any veggies or legumes you have on hand, making it a nutritious and versatile option.
  •  Thai Green Curry: create a delicious flavour base you can keep in the fridge as a paste or curry sauce in the freezer. You can swap the protein for whatever you have available and switch up the veggies too.

Bonus freezer tips

Vegetables: Freezers are like a time capsule for fresh food. It is like pressing the pause button, locking in nutrients and preserving taste, especially when it comes to fruit and veg. Freeze a glut of fresh, seasonal produce, then grab a handful whenever you need to add a veggie hit to your dinner.

Fruit: If you have fruit that’s about to overripen, put it in a container and into the freezer. Very ripe fruit is ideal for a smoothie or a quick frozen yoghurt. You can even freeze grapes whole and use them as ice cubes.
