Ingredients:

150g spelt flour (or plain flour)
5g baking powder
9g coconut sugar
Pinch fine sea salt
310ml your choice of milk
100g chunky peanut butter
20 ml melted coconut oil
10 ml pure vanilla extract
To serve; maple syrup, sliced bananas, strawberries or peanut butter

Method:

1. Sift together the dry ingredients, and in a separate bowl mix together the wet ingredients. Whisk the wet ingredients into the dry ingredients and combine well.

2. Add a little coconut oil to a non-stick frying pan, place over high to medium heat. Pour 2.5 tablespoons (50ml) measure of batter into the pan for each pancake, and cook for about 1 minute, before flipping over to cook the other side. Continue with the remaining batter. Makes 12 pancakes.

3. To serve, top with, maple syrup, sliced bananas, strawberries and/or extra peanut butter.
