Cinnamon French Toast

Serves: 2-3

Ingredients:

  • 1 cup of SodaStream sparkling water

  • 2 eggs

  • 1 heaped tbsp flour

  • 1 tsp vanilla

  • 1/3 cup milk powder

  • 1 tbsp caster sugar

  • 1/2 tsp cinnamon

  • 4 slices of thick fruit toast

  • Butter for cooking

  • Blueberries and maple syrup to serve

Recipe:

  1. To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre Bottle with cold water and carbonate.

  2. Whisk together eggs in a large mixing bowl. Add in flour, vanilla, milk powder, SodaStream sparkling water, sugar and cinnamon and whisk again until smooth.

  3. Place one piece of bread into the mixture to soak while you heat a non-stick frypan on medium and add a knob of butter to melt. Once the butter has melted, add the soaked piece of bread to the pan to fry until golden and puffed. Flip and continue to fry until golden.

  4. Keep the cooked French toast warm in a low oven while you repeat the cooking process with the remaining toast.

  5. Once all toast is fried golden, serve with berries and maple syrup.

Masala Scrambled Eggs

Serves: 2

Prep Time: 10 mins

Cooking Time: 5 mins

Ingredients: 

  • 60ml SodaStream sparkling water

  • 1 tbsp olive oil

  • 1 small red onion, finely chopped

  • 1 garlic clove, minced

  • 1 tsp grated ginger

  • 1/4 cup frozen green peas

  • 1/2 tsp red chilli flakes

  • 4 eggs

  • 1/2 tsp ground turmeric

  • 1/2 tsp garam masala

  • 1/2 tsp sea salt flakes

  • Fresh coriander, to garnish

Recipe:

  • To prepare the SodaStream sparkling water: Fill a SodaStream 1 Litre Bottle with cold water and carbonate.

  • Heat oil in a frying pan on medium. Add the onion, garlic and ginger. Sauté for a few minutes, tossing constantly until the onion starts caramelising.

  • Add the green peas and chilli. Sauté for a minute or two until peas are glazed. Reduce heat to low.

  • Crack eggs into a medium bowl. Add turmeric, garam masala and salt. Whisk with a balloon whisk until pale and creamy.

  • Add sparkling water to the egg mixture and whisk gently for a few seconds.

  • Add the egg mixture to the onion mixture in the pan. Using a wooden spatula, draw the egg from the edges to the centre of the pan in a cutting motion.

  • Cook for a minute or two until eggs are just cooked and still wobbly.

  • Garnish with fresh coriander leaves and serve hot with crusty bread.
