Ingredients:
- 3 zucchini, grated
- 2 corn cobs, stripped of kernels
- 6 extra large eggs
- 4 spring onions, finely chopped
- 1/2 cup McKenzie’s Coconut
- 1/3 cup parmesan, finely grated
- 1/2 tsp lemon zest
- 2 tbsp olive oil
- To serve, sour cream, chilli jam & fresh coriander
Method
- In a large bowl, combine the zucchini with corn kernels, eggs and spring onions. Mix with a fork until well combined.
- Add flour, Parmesan, lemon and seasonings to the zucchini mixture, mixing well.
- Heat a large frying pan over medium heat and add oil. Form small patties with your hands and place into pan, cooking for 2 to 4 minutes until golden. Turn patties, taking care as they are fragile, and cook the other side. Remove to a paper towel lined plate and keep warm whilst repeating with remaining mixture.
- Serve patties with sour cream, chilli jam and coriander.
