Ingredients:
- 1/2 cup McKenzie’s Chick Peas
- 1 1/2 cups raw mixed nuts & seeds
- 1 cup medjool dates
- 1 tbs honey or maple syrup
- 1 tsp vanilla extract
- 3/4 cups McKenzie’s Shredded Coconut
- 1/2 tsp McKenzie’s Ground Cinnamon
- 1/4 cup cacoa powder
Method
- Prepare chick peas according to pack directions, until well cooked.
- Meanwhile, put the nuts into the food processor and blend until coarse. Add dates and blend again. Remove from the food processor.
- Place chick peas (can be warm or cooled) into a food processor with 3 tbs water, honey and vanilla and puree to a smooth paste.
- Add nut and date mixture back into food processor with remaining ingredients and blend until combined. Mixture should combine to form balls easily.
- Roll mixture into balls approximately the size of a walnut. Balls can be rolled into extra shredded coconut or alternatively, fine desiccated coconut. Place in an airtight container and store in the fridge or freezer.
