(I also sneak extra veg into these sometimes, eg. half a cup of grated carrot or zucchini)
You’ll Need:
2 medium bananas, mashed
3 cups whole rolled oats
½ cup shredded coconut
⅔ cup frozen berries of your choice
⅔ cup milk or milk alternative
2 tablespoons maple syrup or honey*
2 tablespoons olive oil
1 teaspoon vanilla extract
2 teaspoons cinnamon
1 teaspoon baking powder
Method:
Preheat oven to 180°C and grease a square baking dish or tin with a little olive oil.
Mix all ingredients together in a bowl, folding in the berries last.
Pour mixture into the greased baking dish and bake for 20-25 minutes until golden brown.
Allow to cool before slicing into bars.
* May be omitted as the banana also acts as a sweetener. Honey should not be used for children under 1 year.
Makes 12 small bars
