Ingredients
3 tablespoons ORGRAN Vegan Easy Egg™
1 cup water
2 ½ teaspoons oil
1 avocado, smashed
1 teaspoon lime juice
4 slices toasted bread
pinch salt & pepper, to taste
Method
Smash avocado and add lime, seasons with salt and pepper then set aside.
Whisk Vegan Easy Egg™, water and oil in a medium bowl until blended.
Spray a large non-stick pan with oil. Heat over medium heat until hot. Pour in egg mixture.
As eggs begin to set, gently pull the eggs across the pan with a spatula, forming large soft curds. Continue cooking – lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly.
Spread the smashed avocado on top on the toast and top with eggs. Season with salt and pepper to taste.
