Ingredients:

1 TSP OLIVE OIL

1 PACKET OF CLEAVER’S ORGANIC BEEF MEATBALLS

1 BROWN ONION, DICED

4 CLOVES OF GARLIC, FINELY CHOPPED

2 TBSP TOMATO PASTE

1 X 400G TIN OF DICED TOMATOES

1 CUP OF TOMATO PASSATA

1 BAY LEAF

1 TSP FRESH THYME LEAVES

1 TSP CHOPPED ROSEMARY

1 TSP WORCESTERSHIRE SAUCE

1 TSP SUGAR

¼ TSP CHILLI FLAKES

2 TBSP CHOPPED PARSLEY

¼ OF BASIL LEAVES + EXTRA TO GARNISH

1 CUP PACKED BABY SPINACH LEAVES

3 EGGS

SALT & PEPPER

SHAVED PARMESAN

BREAD TO SERVE

Method:

  1. Pre-heat oven to 200 degrees Celsius
  2. In a large saucepan or frying pan, heat oil over medium heat
  3. Add the Cleaver’s Organic Beef Meatballs and fry, turning for 3-4 minutes or until brown all over. Remove meatballs on to a plate.
  4. To the pan, add the onion and garlic and cook, stirring for 2 minutes.
  5. Add the tomato paste and cook, stirring for 1 minute.
  6. Add diced tomatoes, tomato passata, bay leaf, thyme, rosemary, Worcestershire sauce, sugar and chilli flakes. Bring to a simmer and cook sauce for 10 minutes.
  7. Add the meatballs back in to the sauce and cook for a further 10-15 minutes until the sauce is thick, dark and rich. Add the parsley, spinach and basil leaves. Stir until spinach is just wilted, season with salt and pepper to taste.
  8. Place the meatballs and sauce mixture into an ovenproof dish you’d like to serve it in. You could use one dish or individual ramekins.
  9. Crack eggs on top of the mixture and bake in the oven until eggs are cooked.
  10. Serve with fresh basil leaves, freshly cracked black pepper, shaved parmesan and crusty bread!
