With jasmine rice and broccolini
Ingredients
- 500 mince- chicken or pork (I used pork this time – I assume there is a great vego alternative too!)
- 1 large knob ginger grated
- 2 cloves garlic grated
- 1 tblsp sesame oil
- 2 tblsp brown rice vinegar
- 2 tblsp fish sauce
- 3 tblsp tamari
- 2 brown onion finely diced
- 1 large carrot finely diced
- 2 flat mushrooms finely diced
- 1-2 heads of lettuce – I used baby cos
- Spring onion to garnish
- Chili flakes to garnish
Procedure
- Fry off the onion, garlic, carrot, mushrooms and ginger. Add the mince with your seasoning sauces. Cook for 10-15 mins.
- Steam your jasmine rice and broccolini. I like to top my stream greens with olive oil, S&P and a squeeze of lemon.
- Serve in a bowl, spooning the mince into your lettuce leaves. Top with chilli flakes and spring onion.
- I like to have tamari on hand to season my rice with. Any left over mince is perfect in a stir fry, or used as dumpling filling!
Notes
This is the ultimate ‘feel healthy’ meal. Feel free to serve without rice, we just love our carbs!
