Ingredients
3 tablespoons ORGRAN Vegan Easy Egg™
1 cup water
2 ½ teaspoons oil
large flour tortillas
1 cup grated vegan cheese
½ cup sliced mushrooms
½ onion, diced
1 fresh tomato, diced
1 avocado, mashed
1 teaspoon lemon
pinch of salt & pepper, to taste
Method
Whisk Vegan Easy Egg™, water and oil in a medium bowl until blended.
Spray a large non-stick pan with oil. Heat over medium heat until hot. Pour in egg mixture.
As eggs begin to set, gently pull the eggs across the pan with a spatula, forming large soft curds. Continue cooking – lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly.
Top flour tortilla with Vegan Easy Egg™, grated vegan cheese and vegetables. Take care not to layer on the ingredients to thickly.
Lightly coat a pan with oil and set to medium heat. When the pan is hot, add the tortillas and cook for 2 ½ minutes, until golden brown.
Once the cheese is melted, fold the tortilla in half then flip until browned.
