(SERVES 6)

INGREDIENTS FOR CARROT CAKE:

1 3/4 cup of all purpose flour

1 3/4 tsp of baking powder

1 tsp of ground cinnamon

1/2 tsp pf ground nutmeg

1/2 tsp of baking soda

1/2 tsp of salt

1 cup of fresh grated carrot

3/4 cup of fresh orange juice

1/2 cup of white sugar

1/4 cup of vegetable oil

1 large egg

1tsp of vanilla extract

INSTRUCTIONS:

Heat the oven to 375F. Line 13 X 9 X 2 inch baking pan with parchment paper extending over each side, whisk flour, baking powder, cinnamon, nutmeg, baking soda and salt in a medium bowl.

In another medium size bowl, whisk fresh carrot, orange juice, sugar, oil, egg and vanilla.

Stir wet ingredients in with the dry ingredients , just till blended. Spread into the prepared pan. Bake for  approx 20 minutes or until the wooden tooth pick inserted in the centre comes out clean.

Cool  in pan on wire rack for about 10 minutes. Using parchment paper, lift cake from the pan and cool completely on the wire rack.

Using the parchment paper, lift the cake off the wire rack and onto a clean surface. With a 2 1/2 inch round cookie ( biscuit) cutter, cut out 6 rounds.

ORANGE SAUCE INGREDIENTS:

1 cup of freshly squeezed orange juice ( approx 2 -3 oranges)

Zest from 1 orange

1/4 cup of caster sugar

1 tablespoon of unsalted butter

INSTRUCTIONS:

Mix the orange juice , zest and sugar in a small saucepan. Simmer the juice mixture over a medium heat, stir occasionally , for approx 15 minutes, or until the mixture becomes thick and syrupy.

When the sauce is the constancy the you like, stir in the butte and simmer for about 2 -3 minutes. Remove from heat and allow too cool. Place in fridge till ready to use.

HONEYCOMB INGREDIENTS:

1/2 cup of sugar

4 tablespoons of lyes golden syrup or honey

1 1/2 tsp of baking soda ( bicarb of soda)

INSTRUCTIONS:

Line a baking tray with parchment paper.

Place a saucepan on a low  heat , add the sugar and golden syrup ( or honey) and let the mixture melt, it will then take on a goo type consistency. Turn up the heat to medium and let it simmer till it looks the colour of maple syrup, this should take about 3 minutes. ( its a good idea to set a timer)

Take care not to over cook. The next step happens quite fast so have your whisk and spatula close by. Turn off the heat, whisk in the bicarbonate of soda fast, the mixture will become aerated and pale gold in colour. Stop whisking and grab your spatula to pour the mixture quickly onto the parchment paper.

Leave until set, then you can smash it into the pieces you desire.

( GARNISH OPTIONAL  6  STRAWBERRIES – 6  EDIBLE FLOWERS)

TO ASSEMBLE:

Drizzle orange sauce around the outside of your plate, sprinkle the honey comb. Place carrot cake in the centre of the plate , top with an edible flower and strawberry)
