Ingredients
3 tablespoons ORGRAN Vegan Easy Egg™
1 cup water
2 ½ teaspoons oil
1 tomato, diced
½ onion, chopped
1 teaspoon fresh parsley, chopped
½ cup spinach, chopped
½ cup mushroom, chopped
pinch of salt and pepper, to taste
Method
Preheat the oven to 180°C/350°F.
Whisk Vegan Easy Egg™, water and oil in a medium bowl until blended.
Add tomato, onion, parsley, mushroom, spinach and mix well. Add salt and pepper to taste.
Heat pan to high. Pour in the mixture and cook over medium heat until edges are cooked and golden brown.
Remove from heat and place the pan in the oven at for 15-17 minutes.
