With the school bell sounding for another year, we know it can be hard to find healthy, simple and quick lunch box ideas for the kids term after term.

At Banjo’s Bakery Café, we look to simplify the concept of a ‘healthy lunch box’ to keep kids happy and bellies full until 3:00pm. Try our Summer Salad Sandwich recipe below.

Ingredients:

  • Four Slices of Banjo’s Ancient Grain Sandwich Loaf
  • Butter Lettuce Leaves
  • Two Slices of Swiss Cheese
  • One Avocado, Cut into Slices
  • One Tomato, Sliced
  • Four Slices of Thinly Sliced Salami, such as Genoa
  • Cream Cheese, Spreadable
  • Salt & Pepper to Taste

Method:

Spread cream cheese on Banjo’s Ancient Grain Sandwich Loaf – either toasted or untoasted bread will work. Top with lettuce, swiss cheese, avocado, tomato and salami. Add salt and pepper to taste.
