Picture being at a street carnival somewhere hot, or perhaps hanging out at the beach in Bondi, St Kilda or Surfers Paradise. The smell coming from the street vendors is making you hungry, but it’s only 3 pm. What do you do? Run home and make these bacon and chicken bites, of course. Don’t mess around with anything else.
GET THE FOLLOWING DELIVERED
2 tablespoons olive oil
1 chicken breast, cut into
10 x 1 cm thick strips
1 teaspoon salt flakes
1 tablespoon garlic powder
3 short-cut bacon rashers, cut lengthways into 10 x 1 cm thick strips
10 cherry tomatoes, plus extra to serve
oregano leaves, to serve (optional)
LET’S MAKE THIS!
Drizzle the olive oil on both sides of the chicken, then sprinkle with the salt flakes and garlic powder. Lay the strips of bacon in front of you and top each strip with a piece of chicken and a cherry tomato. Carefully fold the bacon and chicken over the tomato and secure with a toothpick through the middle. Got it? It might take a few goes to get the first one under control, but once you get the hang of it, you’ll be set.
Line the base of your air fryer with baking paper and pop your creations in. Cook on 180°C for 8 minutes or until the chicken is cooked through. The cherry tomatoes will be as hot as a road on a 40-degree day, so be careful. Arrange on a plate and add the extra cherry tomatoes and some oregano leaves, if you like.
Choosing to share these bacon and chicken bites is up to you. I love them so much I’m willing to drop them on the floor just so no one else eats them (and yes, I’d still eat them afterwards). However, for legal reasons I’m not suggesting you do this.
