Allerchic for Eczema and Allergy

As Shrove Tuesday comes around every year my heart is warmed by a memory of inclusion, from my daughters Pre-School years.

Our preschool like many others loved to celebrate all the culturally significant dates on the calendar. But as Shrove Tuesday approached the educators grew very nervous, (I was later told they had seriously considered cancelling celebrations) as they had a little 3-year-old girl with multiple life-threatening anaphylaxis allergies. They had decided it wasn’t worth the risk to let the children make their own pancakes.

But before they completely pulled the plug on the festivities, one of the educators had the brilliant idea to contact me & ask what I thought. And great things happen when schools, educators & parents come together.

We discussed that basically any recipe you can think of can be adapted to cater for all children whether they be; Gluten Free, Diabetic, Coeliac, Sugar & Fructose Free or anaphylactic.

And so, I wanted to share our recipe in the hope that you can convince your school/playgroup/mothers group or friends to have some inclusive fun this Pancake Tuesday!

Allergy Friendly Pancakes

Ingredients

1 Cup Self Raising Flour (Gluten Free works well with this recipe so does coconut flour)

¼ Cup Raw Sugar

½ Teaspoon Bicarbonate of soda

1 Cup Rice Milk (or cows’ milk if no allergy)

20g Melted Nuttlex/Coconut oil (Or if not dairy free butter)

2 Teaspoons of White Vinegar

2 Teaspoons of Vanilla Extract

Good Shake of Cinnamon

Method

Step 1: Combine flour, sugar & cinnamon leaving ingredients to pile up like a mountain.

Step 2: Sprinkle Bicarb soda on top of your mountain.

Step 3: In a separate bowl or jug combine all the Wet Ingredients. Warm slightly & pour around outside of your mountain.

Step 4: Pour vinegar onto Bicarb Soda creating a fizz, then Wisk all ingredients to combine.

Step 5: Grease a medium heat frypan & add tablespoons of mixture. Cook until bubbles appear on the surface (1-2minutes), Flip with a spatula & cook for a further 1-2mins.

Serve immediately with your favourite toppings.

Top Tips
  • I always add a sprinkle to cinnamon to the mix as cinnamon helps to regulate blood sugar levels.
  • Don’t add chilled milk as this will resolidify the butter/nuttlex. I always warm the milk (20/30seconds in the microwave) before adding to the mix.
  • To Keep Pancakes moist Butter/Dairy Free Spread the tops as they come out of the pan.
