Here’s a hearty recipe that’s sure to be a favourite this winter. Packed with loads of flavour it’s sure to warm their bellies on a cold winters day.

(The chorizo can also be substituted with bacon.)

 

Prep Time: 10 minutes

Cooking Time: 20 minutes

Ingredients:

1 litre salt-reduced chicken stock

1 cup red lentils

1 clove garlic, crushed

2 medium carrots, chopped coarsely

2 stalks celery, trimmed, chopped coarsely

2 chorizo sausages, diced

1 medium brown onion, chopped finely

2 tablespoons olive oil

Method:

Heat oil in a large saucepan, cook the garlic, onion, chorizo until brown.

Add celery and carrots over high heat until softened.

 

Stir through the lentils.

Add stock, bring to boil. Reduce heat and cook uncovered for about 15 minutes or until vegetables and lentils are tender.

Season to taste with salt and pepper.

Serve with bread, if desired.
