Forget trying to get your hands on yeast in the supermarket at this time – it’s impossible! This bread rises beautifully thanks to a few pantry staples – vinegar and bicarbonate of soda. Oh, and there is no waiting for the dough to prove or rise. It’s a mix and bake kind of recipe – easy!

 Prep time: 10 mins

Cooking time: 25 mins

Serves 8-10

Ingredients:

  • 250ml milk
  • 1 tablespoon vinegar
  • 2 ¼ cups plain flour, plus extra to dust
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon caster sugar
  • ½ teaspoon fine salt, plus extra to season
  • extra virgin olive oil spray
  • 2 teaspoons rolled oats

Method:

  1. Pour milk into a measuring jug and add vinegar. Stir and set aside for 5 minutes.
  2. Meanwhile, in a large mixing bowl, sift together flour, bicarbonate of soda, sugar and salt.
  3. Pour in milk mixture. Use a butter knife to stir, using a cutting action until a sticky dough forms. Turn dough mixture out onto a floured surface and briefly knead until smooth. The dough should still be slightly sticky and very soft. (the softer, the moister and fluffier your bread will be) Shape dough into a ball and use your hand to flatten out into a 16cm disc.
  4. Grease the inside bowl of the Philips All In One Cooker with olive oil.
  5. Place dough into the bowl. Use a pair of scissors to cut a cross into the top of the loaf. Spray with a little olive oil then scatter with oats and season with extra salt.
  6. Set Philips All In One Cooker to BAKE, and time to 25 minutes. Press START. Bread is cooked when it bounces back when lightly pressed with fingertips on the top of the loaf. It will also have a golden brown crunchy base.
    1. Note: The top of the loaf has a steamed look to once cooking is complete, so to give it a little colour you can either flip it and brown it for 2 minutes on sauté/sear high temperature, or alternatively brown under a hot grill keeping a close eye on it at all times.
  7. Remove bread from All In One Cooker bowl and set aside for 5 minutes before serving. Serve warm.
    1. Note: You can top your loaf with fresh herbs such as rosemary and thyme, or a scattering of sliced pitted olives before you bake it.
    2. Note: Love cheese? Try adding finely grated parmesan to the dough batter and a sprinkle on top before cooking.
